Tamsyn Parsons appointed General Manager of The Mole Resort in North Devon

The Mole Resort has appointed Tamsyn Parsons as General Manager following a successful period as Interim General Manager.
The Mole Resort, an Iconic Hotels & Resorts property in North Devon, has announced the promotion of Tamsyn Parsons to General Manager. The appointment follows her successful secondment as Interim General Manager, a position she has held since May 2026.
During her interim leadership, Tamsyn has strengthened the resort’s senior team, raised operational standards and overseen improvements across commercial performance, guest experience and employee engagement. She has also supported the appointments of Jamie Coleman as Executive Chef and Chantelle Bull as Head of Leisure, Wellness & Experiences.
Under Tamsyn’s leadership, The Mole Resort has achieved a five-star Food Hygiene Rating, enhanced its programme of seasonal guest experiences and refreshed its food and beverage proposition with a greater focus on local provenance and quality. She has also championed links with the North Devon community and opportunities for emerging hospitality talent, with the resort welcoming nine work experience students in 2026 and subsequently employing one of them.
Set within 125 acres of North Devon countryside near Chittlehamholt, The Mole Resort offers hotel rooms, cottages and eco-conscious lodges, alongside dining, wellness facilities and more than 40 activities. Its location provides access to the region’s countryside, coastline and Exmoor National Park.
